Brazilian Black Beans

3/4 lb. dried black turtle beans
1 med. bell pepper, diced
2 lg. onions, diced
3 cloves garlic, diced
1/2 c. celery, diced
2 T. dried parsley
2 T. dried oregano
2T. dried basil
pinch of ground clove
1 beef or chicken bouillon cube
2T. vinegar
salt and pepper to taste

Meats:  1-2 lbs of meat such as sweet sausage, cubed baked ham, stew beef or pork or beef roast.

Wash then soak dried black turtle beans overnight.  Water should be 2" over the beans.

Brown meats in a skillet and pour off excess grease.  Add green pepper, onions, garlic, celery and spices.  Cook 15 minutes over medium heat.

Combine skillet contents and drained beans in crockpot or soup pot.  Add water to cover all by 3 inches.  Stir in bouillon cube.  If using crockpot, cook on low 6 hours.  If in soup pot on stove, boil, then simmer 6 hours.  Stir every two hours and add water if necessary.  I hour before serving, stir in vinegar.

Serve over rice or barley, with side of cornbread.  Serves 6.
